At the Table with Tune-Up Man: Big Bo’s Grill in Madison Heights
Detroit, what up! Tune-Up Man here with another delicious edition of “At the Table with Tune-Up Man,” where I visit the hottest spots around the city to see what’s cooking. This time, I made my way to Madison Heights to check out Big Bo’s Grill, a new brick-and-mortar location by the man behind one of the most consistent and mouthwatering food trucks in the area.
If you’ve ever had Big Bo’s ribs, you know it’s the real deal. Now, with a new storefront, Big Bo is bringing even more flavor to the table. I sat down with Big Bo himself to talk about what makes his food so special and, of course, to taste some of his signature dishes.
First up, let’s talk ribs. Big Bo’s ribs are no ordinary affair. As he put it, “We put so much love in it, you know what I’m saying? We take our time with it.” These ribs are marinated for 24 hours, smoked to perfection, and fall right off the bone. Big Bo’s Grill is the place to be if you love ribs.
But they don’t just have ribs; they have so many other options like the Surf and Turf Burger. This beast of a burger is loaded with shrimp, five different cheeses, garlic aioli, tomatoes, spinach, all on a soft brioche bun. And if that doesn’t sound indulgent enough, it comes with a side of fried okra that’s out of this world.
But my favorite is the Big Bo’s Salmon Grilled Cheese. As a grilled cheese fanatic, I couldn’t resist, fresh salmon, cheese on both the inside and outside of Texas toast, and a side of parmesan garlic fries. It’s the perfect combination of flavors, and worth every minute of the wait.
But perfection takes time; you can’t rush perfection. “It takes time,” he told me, and you can taste the care and attention in every bite. Whether you’re grabbing the Surf and Turf Burger, the barbecue rub wings, or the legendary Salmon Grilled Cheese, you’re in for a treat.
